Because most people nowadays hobi banget buat wisata kuliner, variasi makanan di Indonesia sekarang udah beragam banget dan nggak monoton. Kayak menu-menu baru yang mix taste between two culture. Persis kayak apa yang di adaptasiin sama Cuca, an elegant restaurant from Jimbaran, Bali. Co-created by Chef Kevin Cherkas, Cuca terkenal jadi one of Asia’s favorite delicious destinations. Serving with western cooking techniques and made exclusively from the best and freshest ingredients sourced from across Indonesia. Berkolaborasi bareng Cassis Kitchen, Cuca came  to Jakarta for two nights only di Cassis Kitchen, Sudirman tanggal 15 dan 16 September kemaren.

 

 

Luckily, Gogirl! diundang to join an elegant evening of Tasting Table by Cassis Kicthen with Cuca. We enjoyed special 9 course set menu that tastiest ever, served by Cuca. So here are they! The first session, ada tiga appetizer yang disuguhin to our dining table. Bruschetta Lolli, Hot Potato and Chili Satay. Let’s we break out them!

For all of us yang suka sama ‘jajanan’ Italia, pasti udah nggak asing sama Bruschetta. Di serve layaknya lollipop, in the first bite the parmesan cracker of it so crunchy in our mouth. Rasa dari sweet tomato and rosemary juga friendly banget di lidah orang Indonesia. Then, Hot Potato! This hot potato is different with others hot potato in any place. Karena with onion fudge, daun bawang berasap dan buah kluak asal Toraja yang udah dibumbuin, ngebuat makanan ini berasa Indonesian taste banget. Tekstur kentangnya yang soft when we bite it, it makes one bite is never enough!

Move to next menu, Chili Satay. For all of us yang nggak suka pedes, jangan kaget duluan. Karena menu ini sama sekali nggak pedes kok, walaupun di ‘package’ pake cabe merah. The taste of Chili Satay ala Cuca ini, didominasi sama rempah Indonesia. Tekstur dan rasa toasted coconut dan serai-nya strong banget di lidah. Aroma arang, wangi daging asap yang nge-mix sama wangi rempah bikin starving tummy banget. Perfect taste when the flavor mixed with chlli!

 

SMOKED BUTTERFISH

Yoghurt buah bit, zucchini pickles and parsley crumbs dari Smoked Butterfish ini yang bikin this dish so fresh dan nggak enek. The taste of sweet, salty dan rasa ‘berasap’ juga bercampur di menu ini. Made from ikan gindara asal Bali Timur yang terkenal seger dan lembut banget, it tastes almost the same as salmon when we bite it. Bedanya tekstur ikan ini lebih soft dari salmon, the look of this food juga menarik banget karena nggak terlalu browny although through a smoked process.

 

RICE TEMPURA SOFT SHELL CRAB

Nothing beats anything other that the Soka crab! This menu is mixed with chili aioli, poached pinneapple and curry leaf yang bikin rich in taste banget.  In the first bite, rasanya hampir sama kayak floured fried shrimp but kepiting asal Kalimantan ini jauh lebih crunchy dan salty. All of body parts dari kepiting Soka bisa kita makan lho, karena it has soft shell. Cangkangnya lunak dan savory banget! Rasa seger dari a piece of pinneaple fruit juga bikin menu ini punya sensasi sendiri, and absolutely must order!

 

GRILLED OCTOPUS

Well, Chef Kevin Cherkas sukses nge-blend two taste of different culture. Karena this menu bisa dibilang the mixture of Indonesian and Spanish flavors. Gurita asal Jimbaran ini disajiin with gazpacho sauce khas Spanyol yang di buat ala Asia, apel Malang yang fresh banget, kembang kol dan ketumbar. Beras juga dipake to create tekstur kental di gazpacho spanyol sauce with asia sense ini. Well, a local smells dari ketumbar yang rempah banget bikin hidangan ini jadi super aromatik. So Indonesia!

 

BBQ BEEF

This is different from other BBQ beef! Karena local beef ini didiami di dalem oil for a few days to create soft meat texture. Saus bbq-nya juga made by his own trick, it means we never found this sauce in another resto. Completely combine with tomato braised beef, roasted onions, soft boiled egg and crispy potato strings yang tasteful banget. Soft boiled egg-nya yang melted dan bercampur sama potato strings bikin hidangan ini must order alert. In the other words, this bbq beef is like rendang Indonesia, but rasanya lebih lite di lidah. It’s truly delicious!

 

BALI BREAKFAST

Well, the main course done! it’s time to review the dessert. If we take a look closer, pasti all of you surely guessed that this dessert is totally made from egg. But you are wrong! This highly creative dessert terbuat dari one hundred percent fruit ingredients, kayak sweet mango, markisa dan kelapa. Whipped coconut and an egg yolk-like mango sphere ini fresh banget and deserve to we call as the perfection of taste! Semburat manis dan asam dari markisa ngeblend as perfect it can be sama sprinkled coconut biscuits yang nggak sengaja kegigit, while we eat this dessert. Kinda rare to be found in Jakarta!

 

BROWNIE

According to chef Kevin Cherkas, Jakarta’s people are so crazy to brownies. Jadi nggak heran kalo this dessert menu probably be another our favorite menu. Warm chocolate mousse dari brownie ini bisa dibilang strong banget. But, palm sugar ice cream yang melted didalamnya hadir buat netralin strong choco taste tadi. With white cocoa crumbs as the topping could be rocks in our tongue!

Well, every dishes is so well from start to finish. The best dining experience! Four thumbs up for Cassis Kitchen to made this fabulous food event, and Cuca for an amazing dishes. Anyway, kalo lagi jalan-jalan ke Bali, don’t forget to try a true soul of Cuca lewat their special menu, ya!
